Strawberries and Cream Cheesecake

I love baking when the summer rolls around and I have full access to all of the delicious produce that isn’t available the other months of the year.  During the dead of winter I often look longingly at the recipes filled with delicious baked goods that incorporate fruits that just aren’t seen this far north at that time.  Strawberries are in full flourish right now, and I picked up a massive helping (warning – there will be additional strawberry themed recipes in the near future).  This recipe for Strawberries and Cream Cheesecake had caught my eye in the fall, and I’ve patiently waited to undertake the task.  Creamy strawberry deliciousness was almost too much to handle, and I will definitely be making this one again while the strawberries are at their sweetest.
